Potato Crusted Salmon
Directions
- Wash, peel and grate potatoes.
- Add in 1 tablespoon of dry rub onto grated potatoes and toss together.
- Place salmon skin side down on a cutting board or a work station.
- Sprinkle rest of dry rub (2 tablespoon) on each salmon fillet.
- Press the grated potatoes onto salmon the firmly.
- Add olive oil to a non stick frying pan and heat at medium.
- Place salmon gently crust side down in frying pan.
- Cook salmon for 3 minutes on medium heat until potatoes are golden brown.
- Flip to the skin side down and finish cooking in the oven at 350 for 10 min until potatoes are cooked.
Optional:
Serve with Chipotle Mayonnaise (1 tablespoon Eadrey's Chipotle Dry Rub and ½ cup of mayo)
