Steamed Mussels In Jerk Broth

Ingredients
- ¼ Cup Advanced Jerk Marinade
- 1 tsp grated ginger
- 1 tbs chopped parsley
- 1 lemon cut in wedges
- 2 lb mussels
- 1 cup vegetable broth
- ½ cup white wine

Directions
- Scrub and take off all the hair off the mussels (fibrous hairs)
- Only use mussels that are closed – set aside
- In a large pot, add jerk marinade, ginger, broth and white wine
- Bring to a boil then add mussels and cover lid
- Steam the mussels for about 10 minutes or until all the mussels open, if there is some that does not open, discard
- Turn off the heat and toss in the parsley
- Serve with a lemon wedge
