Cod and Tiger Shrimp Jerk

Ingredients:
- 1 lb of cod (thick sliced)
- 1 dozen Tiger Shrimp
- 1 large Spanish onion
- 2-tbs Jerk Marinade (Beginner's or Advanced)
- 1-tablespoon olive oil
- 1 lemon

Cod and Tiger Shrimp Jerk Preparation
- Peel and clean the Tiger Shrimp.
- In a large bowl place cod and shrimp.
- Slice the onion and set aside .
- Spread the Jerk Marinade all over the shrimp and cod.
- Place a medium skillet on the stove top at medium heat and add 1 tablespoon olive oil.
- Place onion slices in the skillet and sauté for 3 minutes on medium heat.
- Add the cod to the skillet and continue to sauté for 5 minutes on each side on low heat.
- Add shrimp and sauté for 3 more minutes.
- Cut the lemon in half and squeeze half of lemon juice onto the cod and shrimp.
- Slice the other half of lemon for garnish on top of fish.
- Cover and simmer for 3 more minutes.
