Blackened Catfish
Directions
- Melt butter and olive oil together.
- Place chipotle rub in a shallow bowl.
- Dip catfish into the butter and oil and then dredge on both sides in the chipotle rub.
- Heat a black iron frying pan for at least 10 minutes over very high heat.
- Place catfish in iron frying pan cooking for 4 minutes on each side.
- Transfer the catfish fillets with spatula to serving platter and serve them with the lemon wedges.
Serves 2. Enjoy!
