Bacon Sea Scallops

Ingredients

12 large Scallops

12 slices of smoked bacon

½ bread crumb
-
2 tablespoon parmesan cheese
-
1 tablespoon Jerk Dry Rub

1 tablespoon chopped parsley

2 tablespoon olive oil

Directions
- In a medium bowl, mix bread crumb, parmesan cheese, jerk rub & chopped parsley set aside.
- Wrap each scallop with piece of bacon. Secure with toothpicks.
- Drizzle each bacon wrapped scallop with olive top and bottom.
- Then dip each bacon wrapped scallop in bread crumbs mixture to cover top and bottom.
- Place in baking dish and bake at 425°F, turning once for 20 to 25 minutes or until done.
Serves 4 - 6. Enjoy!
